Sometimes when I want to bake something, I just want to make something fun and lighthearted! These coconut cream pies are indulgent, but made with better ingredients. I like to call these kinds of recipes princess food because of the high quality of the ingredients that are included. I hope you'll try these delightful, delicious coconut cream pies!

Ingredients:
-1/2 cup melted coconut butter
-1/2 cup coconut sugar
-2 tbsp maple syrup
-1/2 cup unsweetened applesauce
-2 eggs
-1 tsp vanilla
-1 cup einkorn all purpose flour (or regular flour)
-3/4 cup quick oats
-1/4 cup shredded coconut
-1/2 tsp baking powder
-1/2 tsp baking soda
-1 packet evergreen spicy ginger chai
For the frosting:
-2/3 cup Greek or coconut yogurt
-2 tbsp cream cheese
-2 tbsp coconut butter
-3 tbsp maple syrup
-1/2 cup vanilla protein powder
-2 - 3 tbsp milk
-1 tsp vanilla extract
-pinch of salt
Instructions:
Preheat oven to 350° F. Line a baking sheet with parchment paper. In a bowl whisk together all the wet ingredients, then fold in the dry. Using a small ice cream scoop, place the cookie dough on the pan. Bake for 8 minutes. Cool completely.
While the cookies are baking prepare the frosting:
Using an electric mixer whip together the Greek yogurt, coconut butter, and cream cheese until fluffy. Drizzle in the maple syrup, vanilla, and salt and beat again. Add in the protein powder and beat on low, carefully drizzling in the milk until desired consistency (you want it to be thick but spreadable.)
Place the frosting in a piping bag, then on the bottom of a cookie, pipe a layer of frosting, then sandwich another cookie to it. Repeat with remaining cookies and frosting.
